How To Make: Fluffy Heart-cakes For Breakfast

Fluffy pancakes in the shape of a heart. Perfect for breakfast and to freeze to add it in toddlers lunch box through the week.

We've made this recipe hundreds of time and is a family and toddler favorite. Try it out and let me know what you all think and if your toddler finds it fun and delicious too.

This recipe was an ultimate favorite found on our family recipe book and has become one of our go to every time I'm not sure what to prepare my daughter for lunch. This pancake is meant to be thicker that the usual thin one, so smaller sizes worked better for us. We love putting all sorts of fresh berries all on top of the pancake to gave it a fresh taste. Fluffy Heart-cakes


Ingredients:


Here are the listed ingredients:

  • 1 cup of all purpose flour

  • 2 tbsp of sugar

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1 Egg

  • 2 tbsp unsalted butter (melted and room temperature)

  • 1/2 cup natural yogurt or kefir

  • 1/2 cup whole milk

  • 1/4 tsp vanilla extract

Directions:


Mix all dry ingredients first:

  1. In a large bowl mix the flour, sugar, baking powder and baking soda along with the salt with a whisker. Set aside.

  2. Moving on to the wet ingredients, mix the yogurt and the milk in a cup. Set aside.

  3. Whisk the egg and add a little bit of the milk and yogurt mix, whisk well again.

  4. Add the melted butter into the egg mix, and whisk util integrated.

  5. Pour the rest of the milk mix into the over all egg mix and the vanilla. Whisk until all ingredients come together.

  6. Combine now the wet ingredients with the dry ingredients and whisk slowly and lightly for no more than 3 min. We don't want to over mix it to avoid generating gluten and keep our pancakes fluffy.

  7. On a low-medium preheated non-stick pan put a heart shaped cookie cutter and pour the mix in there slowly.






TIP 1: Do not pour too much into it as the mix will come out of the mold as it cooks and inflates.

TIP 2: Keep the pan in low to medium heat, these should cook slowly so it cooks thoroughly in the middle. Patience will be your best friend here.


You can decorate as you wish: add fresh fruit, syrup, peanut butter, whip cream or anything your heart desires! They keep well frozen for up to 3 months, so you can always cook a bigger batch for the week or later.
